MEDITERRANEAN CHICKEN by Purplepuss
3-4 Chicken Breasts cut into chunks
Half a Chorizo ring (or a whole one) remove the skin by slicing lengthwise down the middle then chop it into bits
2 Red Peppers
6-7 Sundried tomatoes chopped finely
4-5 cloves of garlic
some Black Olives (I use half a medium size jar)
A bottle of good white wine (but only use a large glass for this recipe)
2 chicken stock cubes in a pint of boiling water.
1/3 of a tube of tomato puree.
half a teaspoon cayenne pepper
1 teaspoon Herbes de Provence
Fresh ground pepper (black or rainbow)

(Even SHE did not have the bottle to try THAT one out!
but after a FEW bottles an attempt may be made! )

Grind some pepper over the chicken then fry in a LARGE pan with some olive oil until it turns white.
Chuck in the other ingredients and fry off until the chorizo takes a bit of colour
In a large measuring jug throw in the 2 chicken stock cubes with a pint of water, add the tomato puree, the wine the herbs and the cayenne pepper... stir it then throw it in on top of the other stuff in the big pot.
Cook for half an hour (you can also add potatoes or rice while cooking)
Serve with Tiger bread and lots of wine! :P
